Artichoke



Artichoke (Cynara scolymus), tall, thistlelike perennial plant of the composite family; also, its globe-shaped flower bud, the heart and spiny bracts of which are eaten as a vegetable. Native to the Mediterranean region, the artichoke is grown commercially in warm regions of the U.S.
