Sugar beet
Sugar beet, plant (Beta vulgaris) whose swollen root provides almost half the world's sugar. It was first extensively grown in Europe to replace cane sugar from the West Indies, supplies of which were cut off during the Napoleonic Wars. Sugar beet is grown in all temperate areas in which cool summers ensure good sugar formation.
