Esters



Esters, organic compounds formed by condensation of an acid (organic or inorganic) and an alcohol, water being eliminated. This reaction, esterification, is the reverse of hydrolysis. Esters of low molecular weight have fruity odors and are used in flavorings and perfumes and as solvents; those of higher molecular weight are fats and waxes.
